Corned Beef Stew
/Ingredients
1 can of corn beef
3 cans of tomato Sauce
1/2 of large purple onion
1 tbl. spoon Oil
3 tbl. spoons Red pepper (African)
3 tbl. spoons Curry Powder
3 tsp. spoons Ginger Powder
Directions
Heat the oil in a medium size pot.
Cut purple onion in half circle shapes and place in hot oil.
Let the onions cook until soft and then pour in the 3 cans of tomato sauce and stir onions and sauce together. Let the mixture simmer for 5 minutes.
Next sprinkle in the ginger and curry powder and simmer for 5 minutes. Then add in red pepper to the mix and stir. If you want the stew to be hotter, then add more red pepper.
Let the mixture simmer for 5 minutes and then pour in the corn beef. Stir the mixture together until the corn beef is mixed well with the tomato sauce. Let the stew simmer for 5 more minutes. Once it is complete, you can pour it over rice. Corn beef stew makes a very tasty meal with mix vegetables and a boiled egg.
